This basic buttermilk dressing recipe recipe is easy to make and is a wonderful base for variations. ln case there's no buttermilk on hand, feel free to create your own version by adding 1Tbsp lemon juice to whole or 2% milk to make 1/2 cup total; let it stand for 5 minutes before using. Makes 1 Cup

 ½ cup buttermilk
 2 tbsp extra virgin olive oil
 ¼ cup mayonnaise
 2 tbsp white balsamic vinegar
 1 tsp Worcestershire sauce
 1 tsp honey
 1 small shallot, minced
 ¼ tsp sea salt
 ¼ tsp cracked pepper

Whisk together all the ingredients in a small bowl, or place them all in a mason jar and shake very well. This will keep in an airtight container in the fridge for up to 3 days.

Alternatives:

Blue Cheese Dressing: Use sherry vinegar for your balsamic and add 1/4 cup of crumbled blue cheese.

Citrus Dressing: Use Grapefruit white balsamic for the vinegar and substitute 1/4 cup tahini for the mayo if desired.

Creamy Ranch-style Dressing: Use oregano white balsamic for the vinegar and Wild Dill infused olive oil in place of the extra virgin, omit shallot, add 2 tsp each of minced garlic, fresh chives, fresh dill, and fresh parsley(curly or flat-leaf), and then add a pinch of cayenne.
Honey Ginger Coleslaw Dressing: Use Honey Ginger white balsamic for the vinegar.
