Taste your guacamole as you’re making it. Avocados can take a fair amount of lime juice and cilantro, but since both of these ingredients can vary in strength, it’s a good idea to taste as you go.
Makes 1 1/12-2 cups

Yields1 Serving
 2 large ripe avocados
 1 small plum tomato
 1 small red onion
 1 bunch cilantro
 2 tbsp lime juice
 2 tbsp Lime fused olive oil
 sea salt
 Cilantro & Onion infused olive oil instead of the Lime fused olive oil.

Mash the avocados in a medium-sized bowl.

Dice and rinse the the tomato to get rid of all the seeds, dice the onion, coarsely chop the cilantro, and add them all to the avocado.

Pour in the lime juice and olive oil and mix together in a blender for a creamier finish, or by hand for a chunkier look. (Alternately, just toss everything in the food processor and pulse to combine.)

Add sea salt to taste. This will keep in the fridge in an airtight container for up to 2 days.
