Olive Oil Braised Chicken Thighs with Rosemary

Ingredients
  

  • 4 bone-in, skin-on chicken thighs
  • 4 tbsp Bodacious Rosemary Infused Olive Oil, plus extra for drizzling
  • ½ onion, sliced
  • 2 cloves garlic, minced
  • ¾ cup chicken broth
  • ½ cup dry white wine (or additional broth)
  • 1 tsp Dijon mustard
  • Salt + cracked pepper
  • Optional: chopped fresh parsley, rosemary or lemon zest for garnish

Instructions
 

  • Preheat oven to 375°F.
  • Season chicken thighs generously with salt and pepper.
  • n an oven-safe skillet or Dutch oven, heat Rosemary Olive Oil over medium-high heat. Sear chicken skin-side down for 3–4 minutes until golden. Flip and cook for another 2 minutes.
  • Remove chicken. In the same pan, sauté onion and garlic until softened. Stir in wine, broth, and mustard. Simmer for 2–3 minutes.
  • Nestle chicken back into the pan, skin-side up.
  • Cover and transfer to the oven. Braise for 30–35 minutes, uncover for the last 10 minutes to crisp the skin.
  • Finish with a drizzle of Rosemary Olive Oil and sprinkle of parsley, fresh rosemay, or lemon zest.
