Ingredients
  

  • 1 1 shallot thinly sliced
  • 2 tbsp Bodacious Peach Balsamic
  • 2 peaches thinly sliced
  • 5 tbsp Bodacious Chipotle Olive Oil divided
  • Kosher salt & freshly ground black pepper
  • 1 lb pork tenderloin
  • 1 tbsp shawarma seasoning
  • 6 cup baby arugula

Instructions
 

  • Marinate the Shallots: In a small bowl, combine the shallot with Bodacious Peach Balsamic and set aside to allow the flavors to meld.
  • Grill the Peaches: Preheat an ovenproof grill pan over medium heat. Brush peach slices with Bodacious Chipotle Olive Oil, season with salt and pepper, and grill for 1-2 minutes per side until softened and caramelized.
  • Prepare the Pork: Rub the pork tenderloin with Bodacious Chipotle Olive Oil and shawarma seasoning, then season with salt and pepper.
  • Grill the Pork: Over medium-high heat, grill the pork for 15 minutes, turning every 2 minutes, until the internal temperature reaches 145°F. Remove from heat, cover with aluminum foil, and let rest for 10 minutes to allow the juices to redistribute.
  • Assemble the Salad: In a large bowl, toss together the baby arugula, marinated shallots, grilled peaches, and the remaining 3 tablespoons of Bodacious Chipotle Olive Oil. Season with salt and pepper.
  • Serve & Enjoy: Slice the pork into 3-inch medallions, arrange on top of the salad, and serve immediately.
