SUMMER TOMATO, STRAWBERRY & MOZZARELLA SALAD

This vibrant summer salad pairs juicy heirloom tomatoes, sweet strawberries, and creamy mozzarella with a drizzle of Bodacious Basil Olive Oil and a tangy-sweet strawberry balsamic glaze. Finished with ribbons of fresh basil and a touch of black pepper, it’s the perfect warm-weather dish—equal parts refreshing, elegant, and unexpectedly addictive.

Ingredients
  

Salad

  • 3 large heirloom or ripe tomatoes sliced
  • 2 fresh mozzarella balls drained and sliced
  • 1 pint strawberries sliced
  • 8-10 basil leaves chiffonade
  • Bodacious Basil Olive Oil
  • Balsamic glaze* recipe below
  • Fresh ground black pepper to taste

Balsamic Glaze

  • 1 cup Bodacious Strawberry Dark Balsamic
  • 6 tbsp dark brown sugar

Instructions
 

Salad

  • To chiffonade the basil: Wash and dry the leaves, then stack them with the largest leaves on the bottom. Roll the stack tightly and slice thinly to create basil ribbons. (Alternatively, you can simply chop the basil, but ribbons look more festive.)
  • Assembly: Layer the ingredients on a platter in the order listed above.Drizzle with the cooled balsamic glaze and Bodacious Basil Olive Oil. Finish with a few grinds of black pepper to taste and a sprinkle of the basil. Serve and enjoy!

Balsamic Glaze

  • In a small saucepan, combine Bodacious Strawberry Dark Balsamic with 6 tablespoons of dark brown sugar. Bring to a simmer over medium heat, stirring constantly, and cook until reduced by about half and slightly syrupy, about 2 minutes. Be careful not to overcook it can become bitter. The glaze will continue to thicken as it cools.
