Chocolate Mousse with Espresso Balsamic Drizzle

Ingredients
  

  • ½ cup dark chocolate chips or chopped bar chocolate
  • 1 tbsp Bodacious Regional Pure EVOO (Mild)
  • 2 eggs, separated
  • 2 tbsp sugar
  • Pinch of salt
  • ¼ tsp vanilla extract
  • 1 tsp Bodacious Italian Espresso Dark Balsamic, for finishing
  • Optional: whipped cream, shaved chocolate, or sea salt for garnish

Instructions
 

  • Melt the chocolate gently using a double boiler or microwave in short bursts. Stir in the Mild EVOO until smooth and glossy. Let cool slightly.
  • In a separate bowl, whisk the egg yolks with sugar, salt, and vanilla until pale and creamy. Stir into the chocolate mixture.
  • In a clean bowl, beat egg whites until stiff peaks form. Gently fold into the chocolate base, being careful not to deflate the mixture.
  • Spoon mousse into serving glasses or ramekins. Cover and chill for at least 2 hours (or overnight).
  • Just before serving, drizzle with Espresso Balsamic and top with a pinch of flaky sea salt, whipped cream, or shaved chocolate if desired.
