Roasted Veggie Grain Bowls with Garlic & Balsamic

Ingredients
  

  • 1 cup cooked farro, quinoa, or brown rice
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 sweet potato, cubed
  • ½ red onion, sliced
  • 2 tbsp Bodacious Garlic Infused Olive Oil
  • 1 ½ tbsp Bodacious Traditional 18-Year Balsamic
  • Sea salt + cracked black pepper to taste
  • Optional toppings: arugula, feta, chickpeas, toasted seeds

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with parchment.
  • Toss chopped veggies with Garlic Olive Oil, salt, and pepper. Roast for 25–30 minutes, until golden and tender.
  • In a bowl, layer warm grain base, roasted veggies, and any extras.
  • Drizzle with Traditional Balsamic, garnish with herbs or seeds, and dig in!

Notes

Bodacious Tip: Balance Is Everything

A simple 1:1 ratio of olive oil to balsamic vinegar makes a perfect clean vinaigrette, too. Shake it up and use it on salads, grilled proteins, or even over roasted carrots for an instant upgrade.
