Spinach, Cranberry & Orange Salad

Ingredients
  

  • 10oz bag baby spinach
  • ¼ cup dried cranberries
  • 1 orange, or 1 small can of mandarin oranges suprémed
  • 2 tbsp finely sliced red onion (Pro Tip: Soak in ice water for at least 5 minutes to reduce sharpness.)
  • 3 tbsp cooked, crumbled bacon or protein of your choice
  • 1-2 tbsp feta cheese
  • salt & pepper
  • 4 tbsp Bodacious Pomegranate Dark Balsamic Order Here
  • 6 tbsp Bodacious Blood Orange Infused EVOO Order Here
  • 1 tsp dijon mustard

Instructions
 

  • Whisk together the Bodacious Pomegranate Dark Balsamic and dijon mustard. Drizzle in Blood Orange Olive Oil in a steady stream until thickened. Add salt and pepper to taste.
  • Combine spinach, cranberries, orange segments, red onion, and bacon in a large bowl.
  • Toss with dressing and top with feta.
