  • 1 cup chickpeas drained
  • 1 carrot grated
  • 1 orange peeled and segmented
  • 2 Tbsp pine nuts toasted
  • 1 handful fresh mint chopped
  • 2 Tbsp Bodacious Blood Orange Olive Oil
  • 2 Tbsp Sicilian Lemon White Balsamic

Instructions
 

  • Toss quinoa, chickpeas, carrot, orange, mint, and pine nuts in a bowl. Drizzle with Blood Orange Olive Oil and Lemon White Balsamic, season to taste, and enjoy chilled or room temp.
