Savor the Simple Elegance of Marinated Tomatoes with EVOO and Balsamic Vinegar

There’s something profoundly satisfying about the simplicity of fresh, flavorful ingredients coming together to create a dish that is vibrant, delicious, and effortlessly elegant. Our Marinated Tomatoes with Extra Virgin Olive Oil (EVOO) and Balsamic Vinegar recipe captures the essence of summer with ripe heirloom tomatoes, aromatic garlic, and a medley of exquisite oils and vinegars that elevate this dish into something truly special.

A Symphony of Flavors

This recipe starts with the best of nature’s bounty: organic heirloom tomatoes. Known for their juicy sweetness and robust flavors, these tomatoes are the perfect canvas for our marinade. The addition of fresh garlic, allowed to sit after mincing to enhance its health benefits and flavor, sets the foundation for a dish that’s as nutritious as it is tasty.

The real artistry in this dish comes from its dressings. A drizzle of Arbosana EVOO, known for its grassy notes, and Herbs de Provence EVOO, rich with the flavors of the French countryside, introduce a complexity that is both earthy and refined. The balsamic vinegars—aged 18 years Traditional Balsamic for depth and sweetness, and a dash of bold Espresso Balsamic—create a tantalizing glaze that enhances the tomatoes with a glossy, flavorful finish.

Marinating to Perfection

The process is simple yet requires a bit of patience. After combining the tomatoes and garlic with salt and fresh cracked pepper, the olive oils and vinegars are added. The mixture is then left to marinate in the fridge, allowing the flavors to meld beautifully. This resting period is crucial as it lets the tomatoes absorb all the aromatic goodness of the dressings, turning simple chopped tomatoes into a gourmet experience.

Versatile and Vibrant

Serve these marinated tomatoes as a refreshing side dish, a vibrant topping for crusty bread, or as a stunning addition to a cheese platter. They’re incredibly versatile, adding a burst of flavor to grilled meats or a fresh twist to traditional salads. Whether you’re hosting a dinner party or simply making a meal for two, these marinated tomatoes are sure to impress.
